Pico de Gallo

I’ve always wanted to make pico de gallo and having my own fresh cilantro sealed the deal!



1/4 Red Onion Finely Diced
Half a Lemon (or Lime)
1/4 Cup Cilantro Chopped
2 Roma Tomatoes Chopped (Ribs and seeds removed)
1/4 Large Jalapeno Finely Diced
Dash of Cumin


  1.  Finely dice red onion and soak in lemon juice while prepping the rest of the ingredients.
  2. Prep all other ingredients and add to bowl with red onion and lemon juice.
  3. Serve immediately or will stay in the fridge for almost a week.

Yields: About 1 Cup
