Mexican Pulled Chicken

This is my recipe for Mexican pulled chicken.  I don’t know if it is authentic, but it tastes almost identical to the delicious Mexican chicken I get when I am out to eat.IMG_3589


1 Whole Chicken
3 Celery Stalks, cut in 2-3 inch pieces
1 Medium Onion, (I used vidalia) cut in half
1/2 Fresh Jalapeno
3 Carrots, cut in 2-3 inch pieces
1 Lime, juice only
1 Can Tomato Sauce, (authentically you would use whole tomatoes)
3-4 Garlic Cloves, smashed
1-2 Cups Water, (just to cover the chicken after you have added the stock)
3-4 cups Homemade Vegetable Stock, (could use chicken stock)
2-3 tsp Ground Cumin
1 tsp Chili Powder
3 Bay Leaves
A few dashes of hot sauce (My weakness)
Salt and Pepper to taste – I add a pretty decent amount


1. Salt and Pepper the chicken all over
2. Sear chicken on both sides in a little bit of oil (Oil of your choosing, I used canola oil)
3. Once you have seared the chicken, add every single ingredient from above
4. Let chicken cook on the stove top for about 1-2 hours.  Remove chicken after it is cooked through and tender
5. Pull all meat you can from the chicken and discard all other skin and bones
6. Place the shredded chicken back into the liquid and let cook on the stove top just simmering with the lid on for about 2 more hours
7. Taste and season with more salt, pepper, hot sauce, etc. once you add the chicken back into the liquid
