Source: Veggie Life – Day 3
Hi Friends! Day 3 is upon me and it’s been pretty great.
Day 2 consisted of hard-boiled eggs for breakfast, black bean mini corn quesadilla with quinoa salad for lunch, and 2 mini black bean tostadas with hot organic salsa.
This morning I had a breakfast bar and the same lunch as Day 2. Dinner tonight is eggplant lasagna and another kale stuffed mushroom. I’m stoked for this dinner.
I have been feeling great eating vegetarian – the other perk is that staying away from meat has also helped me stay away from bread products. Double. Whammy. I also did some yoga getting home from work today and so far, have not craved anything too crazy. Although, when does pizza not sound good? I know I can have a veggie one.. but so far staying away from carbs hasn’t been super difficult.
The key to going vegetarian is doing your research and making sure you are still getting the proteins that you need. Quinoa, beans, greens.. find what you like and it makes it much easier!

For a month at least..
Hello all, I know I’ve been gone a long time, but I’m back and I’m hoping you’ll go on this veggie journey with me. I can’t say for sure what prompted this, but I’ve always preferred vegetables over all food, so I figured I would give it a go!
Day 1 –
Everything started out just fine. Breakfast was plain yogurt with honey and flax seed. The only bummer was that I did not buy greek yogurt (#sadface).
I packed lunch today – which was black bean and queso fresco corn quesadillas as well as quinoa salad with fresh veggies and lemon vinaigrette. All homemade-hopefully I’ll remember to post the recipes!! The only problem was.. one of my best girl friends asked me to sushi and I had to say yes. BUT I did not falter! (I did say I would allow myself fish.. but come on-day 1 I had to at least stick with it). I had a vegetarian roll that had panko crusted sweet potatoes and some beets and avocado and cucumber. I never thought I would say this, but I didn’t miss the fish!
Dinner is up next-Kale filled portobello mushrooms with thinly sliced provolone.
All in all, I can honestly say I did not go hungry today-like most stereotypes about vegetarians would say. I’m feeling great and healthy and will keep you all posted! Ha, posted.
Well, I’ve been doing my blog for a couple of weeks now and it is getting easier! Fair warning that most of my recipes are just for one person, me. I try to measure and gauge things as best as possible though, so that recipes can be adjusted for more people. I also just had a birthday in May (Yay me! Another year bites the dust), and I received a grill!! So, look forward to a lot more grilling recipes to come!
